As I stated earlier, I do not know what the car is, but I think I identified it.  That car has nothing to do with the Fulvia.

Looking at the front light design I would go for a 1961-62 Michelotti (OSCA) Fiat 1500/1600*. I'm still not sure as the hood seems to be too short in the workshop picture.

*with or without 'bend' is hard to say from that camera angle
Or is it an ordinary early Fulvia after all?

Close enough,

I have it as "Carrozzeria Michelotti workshop in the Via Levanna, 1959"

I think that the following car was in the works.  It was presented on the 1960 Paris salon d'auto, so this could match with the pictures taken in 1959.
